Having fun making chocolate

Jessie Lewis and I held our first “Fun with Chocolate” workshop on Monday. In an action packed 4 hours participants worked with chocolate in a variety of formats. They started by dipping dried fruit in chocolate, making chocolate disks (called “mendiants”), and even working with a chocolate bar mould. Then we moved onto pralines. After learning how to make butterscotch, everyone piped fillings into moulds. Our next activity involved piping different nut mixtures (gianduja) into small chocolate cups. The last activity was packing the chocolate they had made into ballotin boxes and learning how to decorate them. A great time was had by all. Here are some photos.
